Stephen Harris shares with Henry Jeffries stories from his new cookbook, including masterful ways to get the best flavour, seasonal local produce and nostalgic home cooking.

Self-taught chef Stephen Harris started cooking professionally in 1996. While moving around different kitchens and working his way up the career ladder, he was able to learn the fundamentals of cooking and hone his skills and is now chef patron of Michelin-starred The Sportsman in Seasalter, Whitstable. His previous book, The Sportsman, was published in 2017.

Henry Jeffreys is an award-winning drinks writer who has written for The Critic magazine, the Guardian, Spectator and BBC Good Food magazine as well as appearances on BBC Radio. His books include Empire of Booze; and Vines in a Cold Climate: The people behind the English wine revolution.
